White Chocolate Cake

Baking a Chocolate & white cake together?
I am looking to bake a combined chocolate and white cake together in a angel food cake mold. I have never tired this a need oponion from people who have or seen one done.
I am also wondering if I can use one white cake mix and add cocoa for my chocolate side instead of using two mixes. If anyone has experience or can answer these problems for me…I am going to attempt The Cake tonight.
Take a piece of parchment paper…hold mold sideways a fill white side. Cut parchment to fit mold to seperate, then add chocolate side. Once cake mix is in pan gently slide out parchment and then you have 1/2 and 1/2…you did not say if you wanted marbled…checkered…so here is what I do.

10,000 Meals Later: Recipes from a Mom on the Run $3.99 From the Introduction (Memoirs of the Last Cooking Mom In America):In the more than twenty-five years that I have been married, I have cooked nearly 10,000 dinners. Eating out is something done infrequently in our household. We do not eat “fast food,” and there are few restaurants that satisfy our family requirements for speedy service, quality food, and reasonable prices, hence the 10,000 dinners. This book is intended to be a survival book of sorts. It is a combination of what I would hope to be “helpful ideas’” recipes, tips, and anecdotes for those men and women who feel somewhat committed to their kitchens, daily and nightly. Most of the recipes (other than cake and cookies) allow for substitution of ingredients or a variation in ingredients, depending on your individual likes and dislikes. While those who know me know that I am interested in good nutrition, I would call myself a moderate on the nutrition continuum. I use fresh fruits and vegetables in all my cooking, but you will find both processed white and brown sugar on my shelves. YOU WILL ALWAYS FIND CHOCOLATE CHIPS in my refrigerator. I’m not sure whether it’s a positive or a negative, but my children don’t really share this food passion with me! My kids have been taught that cookies and cakes are to be enjoyed. For the most part, you make them and do so from scratch. This is a great built-in diet control for the whole family. The recipes that follow are often not specifically quantified in terms of amounts. This is done somewhat purposely to allow for creativity on the part of the chef. It is also done because this chef often “reinvents the wheel” each time she cooks and does so more intuitively than exactingly. Intuitive cooking works really well in all areas except for baking, where exact measures are essential. For all recipes of baked goods, the user is provided with specific |

Cookwise: The Secrets of Cooking Revealed $5.8 Can you tell whether a recipe will work before you cook it? You can if you really know what’s cooking. In the long-awaited CookWise, food sleuth Shirley Corriher tells you how and why things happen in cooking. When you know how to estimate the right amount of baking powder, you can tell by looking at the recipe that the cake is overleavened and may fall. When you know that too little liquid for the amount of chocolate in a recipe can cause the chocolate to seize and become a solid grainy mass, you can spot chocolate truffle recipes that will be a disaster. And, in both cases, you know exactly how to “fix” the recipe. Knowing how ingredients work, individually and in combination, will not only make you more aware of the cooking process, but transform you into a confident and exceptional cook — a cook who is in control.CookWise is a different kind of cookbook. There are over 230 outstanding recipes — from Snapper Fingers with Smoked Pepper Tartar Sauce to Chocolate Stonehenge Slabs with Cappuccino Mousse — but here each recipe serves not only to please the palate but to demonstrate the roles of ingredients and techniques. A What This Recipe Shows section summarizes the special cooking points being demonstrated in each recipe. This little bit of science in everyday language indicates which steps or ingredients are vital and cannot be omitted without consequences.Among the recipes you’ll also find some surprises. Don’t be afraid of a vinaigrette prepared without vinegar or a high-egg-white, crisp pâte â choux. Many of the concepts used here are Shirley’s own. Try her method of sprinkling croissant or puff pastry dough with ice water beforefolding to keep it soft and easy to roll.CookWise covers everything from the rise and fall of cakes, through unscrambling the powers of eggs and why red cabbage turns blue during cooking but red peppers don’t, to the essential role of crystals in making fudge. Essence of Chocolate: Recipes from Scharffen Berger Chocolate Makers and Cooking with Fine Chocolate $35 The first cookbook from America’s premier chocolate makers, filled with recipes, kitchen tips, and dazzling photographsAs Americans have become fascinated by chocolate, and especially high-quality chocolate, one name has risen above the rest: Scharffen Berger. Founded in 1996 by Robert Steinberg, a physician and amateur chef, and John Scharffenberger, an award-winning vintner, the company’s confections have won a following among food professionals and home cooks alike. Now, in their first cookbook, the duo shares their passion with the world. The Essence of Chocolate features more than one hundred spectacular — and often simple — recipes drawn from the Scharffen Berger files and from two dozen top pastry chefs. It is divided into three sections: “Intensely Chocolate,” which includes such decadent treats as That Chocolate Cake, in which the sumptuous flavor of chocolate is the star; “Essentially Chocolate,” with lighter chocolate desserts like White Velvet Cake with Milk Chocolate Ganache or Brown Butter Blondies; and “A Hint of Chocolate,” with recipes that use chocolate’s spicier qualities to their best effect, like Vegetarian Chili and John’s Cocoa Rub. And all will work magnificently with any high-quality chocolate. Filled with helpful tips, sumptuous photographs, and the story of how chocolate is really made, here is a book that is every bit as seductive as its subject.Robert Steinberg had been practicing medicine for twenty years when he went to France in 1994 to explore chocolate making, then returned to his own kitchen to create the first versions of what would be Scharffen Berger chocolate. He lives in San Francisco and until recently practicedat the San Francisco Free Clinic. John Scharffenberger founded Scharffenberger Cellars, one of the premier sparkling wine manufacturers in the United States. He sold his interest in the winery, and in 1996 he and Steinberg founded Scharffen Berger Chocolate Maker. Scharffenberger |

This comprehensive introduction to baking in miniature also provides tips on glazing, icing, and making chocolate decorations and offers details on the equipment you need to get started (including a cake pan chart, so that you can use those mini rose pans, heart pans, and other fun shapes to bake unique creations). The authors are famous for their over-the-top decorations, and they’ll take you step-by-step through the process of creating cakes piped and appliquéd with bumblebees (white chocolate wings and nonpareil stripes make them irresistible!), blooming roses (or, if you prefer, delicate hydrangeas with lifelike shaded petals), wild meringues (dressed with tiger stripes, zebra stripes, or leopard spots), and spiky dragons (right down to the serpentine tail). The recipes in Little Cakes from the Whimsical Bakehouse are categorized into three levels: one star for easy, two for intermediate, and three for challenging. So whether you want to start with a charming, super-easy star-shaped mini strawberry shortcake or strive for A Day at the Beach pail-shaped cake, complete with cookie-crumb sand, chocolate shovel, and edible seashells, you’ll find a cool confection that fits your skills. If you’re not ready for complicated decorating, this book also provides easy presentation |

Chapters: Chocolate Chip Cookie, Clam Chowder, Cape Cod Potato Chips, Boston Cream Pie, Boston Cooking-School Cook Book, Wachusett Potato Chip Company, Clam Cake. Not illustrated. Excerpt: A chocolate chip cookie is a drop cookie that originated in the United States and features chocolate chips as its distinguishing ingredient. The traditional recipe combines a dough composed of butter and both brown and white sugar with semi-sweet chocolate chips. Variations include recipes with other types of chocolate or additional ingredients, such as nuts or oatmeal. The chocolate chip cookie was accidentally developed by Ruth Graves Wakefield in 1933. She owned the Toll House Inn, in Whitman, Massachusetts, a very popular restaurant that featured home cooking in the 1930s. The restaurant’s popularity was not just due to its home-cooked style meals; her policy was to give diners a whole extra helping of their entrées to take home with them and a serving of her homemade cookies for dessert. Her cookbook, Toll House Tried and True Recipes, was published in 1936 by M. Barrows |

More from Magnolia $27 Eight years ago, Alyssa Torey brought the comfort of grandma’s kitchen to New York City when she opened the Magnolia Bakery. Located on Bleecker and 11th, in the heart of Greenwich Village, it quickly became a popular destination; in the evening the line of people craving one of Magnolia’s world famous cupcakes or a cup of banana pudding extends down the block. The success of the bakery gave birth to The Magnolia Bakery Cookbook, written by Alyssa and her then-partner. Published by Simon & Schuster in 1999, it’s gone through 7 printings and has over 46,000 copies in print. Today the bakery is busier than ever (they sell about 15,000–yes, 15,000–cupcakes a week), and Alyssa has finally succumbed to the pressure to write a second book. In More From Magnolia Alyssa offers home cooks 75 of the bakery’s most requested recipes, discontinued treats, and favorite sweets from her own home kitchen. Craving Magnolia’s Red Velvet Cake or the decadently creamy Banana Pudding? Miss having a Raspberry Cream Cheese Breakfast Bun with your morning coffee? (The bakery had to discontinue all their breakfast items to keep up with the demand for cupcakes.) You’ll find those recipes here. Of course, there are the recipes for the Chocolate and Vanilla cupcakes and Buttercream Frosting, but you’ll also find Apple Cake with Butterscotch Cream Cheese Frosting, Devil’s Food Cake with Seven Minute Icing and Coconut, and Chocolate Pecan Pudding Pie. Not to mention Blueberry Coffee Cake with Vanilla Glaze, Pumpkin Walnut Cookies with Brown Butter Frosting, White Chocolate Pecan Bars, Nectarine Double Crust Pie, and Pumpkin Cheesecake with Gingersnap Pecan Crust. There are even recipes for Magnolia’s best-loved ice creams. Whether you’re a regular visitor or just dream of making a pilgrimage, More from Magnolia brings the delights of the bakery to your very own kitchen. |

Chock-full of delicious and decadent recipes that use natural sweeteners instead of granulated, refined white and brown sugars, The Naturally Sweet Baker is not about deprivation—it's about indulgence. Author Carrie Davis proves that using natural sweeteners, such as honey and maple syrup, will result in some very sweet and tasty desserts. Just listen to these treats: Cinnamon Pecan Sticky Buns, Devil's Food Cake with Italian Meringue Chocolate Buttercream, Black Raspberry Ripple Ice Cream, and Banana Chocolate Crêpes. Those ought to excite your sweet tooth! Not only are natural sweeteners delicious, but they are good for you, too. Carrie makes it all very simple with descriptions and explanations of each sweetener—maple sugar, barley malt syrup, and molasses, just to name a few. Many of the sweeteners are probably already in your pantry. And for those that aren't, there is a convenient mail order list so you can stock up on your favorite ingredients. With chapters on breakfast treats, cakes, cookies, ice creams, cobblers, and pastries, you'll never run out of ideas.
