Frosting For Chocolate Cake

Chocolate cake frosting question!?
Hi guys.
I am not much of a baker and need some advice. I’ve been looking at different frosting recipes and I am wondering what does the ingredient butter do for frosting. Should I use a recipe with butter and cocoa or a recipe with melted Dark Chocolate with cream?
Cream or butter? which is better?
thanks!
Hey guys. thanks for all the helpful replies!
I was wondering, what if I added butter to the thickened cream and melted dark chocolate? do you think that will turn out good?
Dark chocolate with cream is called a ganache and is completely different from butter icing. Ganache is like a sauce when warm and then will set once cold to be a sticky, soft consistency. Ganache is richer than butter icing. If you use ganache make sure it cools a bit before putting on The Cake but don’t let it set or you’ll have to melt it again before applying.
Butter icing with cocoa can be spread between layers of a cake as well as on the top as it has a firmer consistency when made than ganache (ganache should only be placed on top, as it’s too watery when warm and too stiff when cold to spread). Make sure you use icing sugar if making butter icing.

Gale Gand’s Just a Bite: 125 Luscious, Little Desserts $12.95 Sweets. As kids, we could never get enough, and anything sugary, gooey, and good was gratefully devoured. As adults, we give a polite “no thank you” when a dessert tray passes by, or take but a sliver of cake if offered, showing restraint that would make any ten-year-old incredulous. Well, that’s not fair. Why should kids get all the fun? Now, adults can have the best of both worlds. Gale Gand’s Just a Bite is equal parts kitchen-table, kid-giggling joy and uptown, grown-up chic. Award-winning pastry chef Gale Gand has collected the recipes from her Food Network show Sweet Dreams and renowned restaurant Tru into a book that is as charming and accessible as the author herself. These recipes aren’t just for the expert baker or pastry connoisseur but also for the everyday cook looking to lighten up the end of a meal, or even replace the ubiquitous brownie with, say, Banana Brûlée Spoonfuls. With easy-to-follow instructions, a handful of ingredients, and a craving for fun, you’ll be whipping up Devil’s Peaks with Double-Chocolate Drizzle and popping them in your mouth before, as a kid, you could have licked the frosting beater clean.Gale has also assembled a mini-menu of sorts for her delectables. Called the Tasting Trio, three of the treats are served together for maximum, sweet tooth bliss. Combinations like Bomb Poppers, Marshmallow Moons, and Butterfly Cupcakes; or Orange-Vanilla “Fried Eggs” on Cinnamon Toast, Meringue Cigarettes, and Mini Granita Watermelons. German Chocolate Cake $38.99 High Quality Content by WIKIPEDIA articles! German chocolate cake is a layered chocolate cake filled and topped with a coconut-pecan frosting. Sweet baking chocolate is traditionally used for the chocolate flavor in the actual cake, but few recipes call for it today. The filling and/or topping is a caramel made with egg yolks and evaporated milk; once the caramel is cooked, coconut and pecans are stirred in. Occasionally, a chocolate frosting is spread on the sides of the cake and piped around the circumference of the layers to hold in the filling. Maraschino cherries are an added touch. |

Gobba Gobba Hey: A Gob Cookbook $6.62 When Steven Gdula was growing up in western Pennsylvania, gobs were everywhere-at church bake sales and birthday parties, and even stacked by convenience store cash registers, sparkling in cellophane. Transplanted to California, Steven found himself dreaming of gobs: two rounds of moist cake joined by sweet, fluffy icing. The only way to satisfy his craving was to start baking them himself-but with a local spin, using seasonal ingredients and grown-up flavors. Once he perfected his recipes, Steven started selling his gobs from a cart on the streets of San Francisco. Calling his enterprise Gobba Gobba Hey (a nod to the Ramones), he was soon on his way to becoming something of a local food rock star. In Gobba Gobba Hey, Steven introduces readers, bakers, and eaters to the gob. These fifty-two recipes-one for every week of the year, from old-school chocolate and vanilla to matcha green tea with lemongrass ginger frosting-make it deliciously evident why gobs couldn’t be kept a regional secret for long.Praise for The Warmest Room in the House (a Chicago Tribune Favorite Book of the Year)"[Gdula] serves up … a delight, rich but restrained."-Atlantic "Literary comfort food-Very Short List"Vivid, funny and absorbing …Warmhearted."-Dominique Browning, New York Times Book Review |

More from Magnolia $3.97 Eight years ago, Alyssa Torey brought the comfort of grandma’s kitchen to New York City when she opened the Magnolia Bakery. Located on Bleecker and 11th, in the heart of Greenwich Village, it quickly became a popular destination; in the evening the line of people craving one of Magnolia’s world famous cupcakes or a cup of banana pudding extends down the block. The success of the bakery gave birth to The Magnolia Bakery Cookbook, written by Alyssa and her then-partner. Published by Simon & Schuster in 1999, it’s gone through 7 printings and has over 46,000 copies in print. Today the bakery is busier than ever (they sell about 15,000–yes, 15,000–cupcakes a week), and Alyssa has finally succumbed to the pressure to write a second book. In More From Magnolia Alyssa offers home cooks 75 of the bakery’s most requested recipes, discontinued treats, and favorite sweets from her own home kitchen. Craving Magnolia’s Red Velvet Cake or the decadently creamy Banana Pudding? Miss having a Raspberry Cream Cheese Breakfast Bun with your morning coffee? (The bakery had to discontinue all their breakfast items to keep up with the demand for cupcakes.) You’ll find those recipes here. Of course, there are the recipes for the Chocolate and Vanilla cupcakes and Buttercream Frosting, but you’ll also find Apple Cake with Butterscotch Cream Cheese Frosting, Devil’s Food Cake with Seven Minute Icing and Coconut, and Chocolate Pecan Pudding Pie. Not to mention Blueberry Coffee Cake with Vanilla Glaze, Pumpkin Walnut Cookies with Brown Butter Frosting, White Chocolate Pecan Bars, Nectarine Double Crust Pie, and Pumpkin Cheesecake with Gingersnap Pecan Crust. There are even recipes for Magnolia’s best-loved ice creams. Whether you’re a regular visitor or just dream of making a pilgrimage, More from Magnolia brings the delights of the bakery to your very own kitchen. |
